Salame Ventricina Piccante

This roughly ground salami, typical recipe of Abruzzo and Molise (Southern Italy), is stuffed into natural casing and hand-tied. Slices are compact and soft. Expertly dosed chilli, fennel seeds and aniseed give it a decidedly balanced flavour.
