Salame Ventricina
Ventricina, the traditional product of the Italian region of Abruzzo, is mainly made from lean pork meat. Ventricina is a rather coarse-grained salami that is cured for at least 3 months. Once cut, the slices are compact and soft. The flavour is strong but balanced, thanks to a skilful blend of chilli, pepper, aniseed and fennel.
