Cauliflower pizza with speck and cheese
A pizza so healthy yet so tasty that it merits more than just one bite.

1 medium cauliflower |

100 g spreadable cheese or 1 large mozzarella ball |

Cauliflower pizza isn't crazy, it's tasty. Cauliflower pizza may be the solution when you have guests who are intolerant to flour or yeast, and you will certainly be able to enjoy pizza without going overboard with carbohydrates.
The base of the cauliflower pizza has a delicate taste, so don't be afraid that your pizza will be disgusting - it's quite the opposite. You will have a crunchy pizza in which the condiments lends flavor. Another advantage of cauliflower pizza is that there is no need to let the dough rise, or much less boil the cauliflower in advance. In 35 minutes you will have a great meal for a family lunch, dinner with friends in front of the TV or brunch.
The Recipe:
To make the cauliflower pizza, first clean the vegetables by cutting off the buds, wash them well and then put them in the mixer to obtain a puree. Pour it into a large bowl and pour in the egg and yolk, Parmesan cheese, salt and pepper.
Mix everything to make the mixture smooth. Place the baking sheet on a pan and place the cauliflower on top. Use a spatula to distribute the mixture well, trying not to leave holes. The ideal is to have a thickness of one and a half centimeters.
Heat the oven to 200° and bake for 25 minutes so that the base is cooked. In the meantime: If you want to season the cauliflower pizza with tomato and mozzarella, fry a clove of garlic in a non-stick frying pan with a spoonful of oil, then add the tomato paste and cook over medium heat for 15 minutes, until it is dried. Cut the mozzarella into pieces. When the base is cooked, take out of the oven, spread the tomato sauce on top with a spoon or ladle, garnish with mozzarella and bake for another 10 minutes.
If you want to season the cauliflower pizza with speck and cheese, choose robiola, mozzerella pulled apart by hand, Negroni speck in petals or sliced speck cut in small pieces. Alternatively, you can fry a clove of garlic and then add the tomato paste until it has dried. It will take approximately 15 minutes. Cut the mozzarella into pieces. After 25 minutes have passed, take the cauliflower out of the oven, spread the mozzarella on top and bake again for about 10 minutes, so that the cheese is melted.
With spreadable cheese, it will take 5 minutes. The speck and arugula are added last, without having to go into the oven.
