Ham filled chicken rolls baked in the oven

Ham filled chicken rolls baked in the oven are one of those dishes it’s hard to say no to. Like a tantalizing plate of spaghetti alla carbonara or delicious lasagne, chicken rolls can be classified as typical Italian comfort food. You will be amazed how quick they are when having to prepare dinner for all the family in just 15 minutes; if, on the other hand, you are entertaining guests for Sunday lunch, you will receive nothing but praise when you serve up ham filled chicken rolls with roast potatoes!  

The Recipe:

Before starting to make the stuffed chicken rolls, pre-heat the oven to 180°C. Then prepare the breadcrumbs by mixing them in a wide soup dish with a small amount of finely chopped lemon zest, grated pecorino cheese, salt and pepper to taste. Beat two eggs in a separate dish.  

To stuff the meat, cut the chicken breast as best you can into wide thin slices. If necessary, beat the meat gently to make the slices even finer. Then, lay the meat slices on the worktop and place a thin slice of scamorza cheese in the centre of each one, followed by a slice of Negroni prime quality cooked ham. Ensure that these ingredients are no wider than the slice of meat. Now you can close the chicken slice by folding it in two like a parcel or rolling it up. Secure the roll with toothpicks and dip each roll into the beaten egg before coating it with the breadcrumb mixture. Pat it well with your hands so that it remains well sealed. 

Grease an oven tray with olive oil and arrange all the stuffed chicken rolls on it.  It is advisable to dribble some olive oil over the surface of the chicken rolls too. Pop the tray of chicken rolls in the oven and leave to cook for approximately 25 minutes. For the last 10 minutes, switch on the grill function to make them turn crisp and brown. 

What to drink with oven-baked stuffed chicken rolls
Particularly if you accompany your stuffed chicken rolls with roast potatoes, a full-bodied red wine is strongly recommended, such as a Chianti or a Rosso Piceno with its intense fruity taste.
