Golosino Frankfurter sausage and crunchy vegetable rice salad
A classic Italian summer dish, here's a recipe for rice salad that combines Golosino Frankfurter sausage and crisp, crunchy vegetables.

1 x 100 g pack of Golosino Frankfurter sausage with cooked ham |
2 carrots |
1 large courgette |
1 cucumber |
½ a lemon |

Rice salad is a typical Italian dish that for many will instantly bring to mind a hot summer's day under an umbrella on the beach. Whether it's a picnic on the beach or a speedy bite to eat in the office before the holidays, rice salad is the ideal light lunch for summertime and constitutes a meal in itself that can be enjoyed anytime, anywhere.
As is well known, there are a number of variations on rice salad; it can vary depending on the type of rice used, the combination of different ingredients, and the personal preferences of the chef making it!
Our recipe for Golosino Frankfurter sausage and crunchy vegetable rice salad is quick and easy, where the subtle flavour of the Golosino ham Frankfurter sausage combines with the crunch of the vegetables to give life to a delicious, perfectly balanced dish with an explosion of flavours. To make the salad, simply wash all the vegetables, dry and dice into fairly small cubes. Meanwhile, bring a saucepan full of water to the boil and cook the rice.
Once cooked, drain and leave to cool. In a large bowl, make a dressing using a few tablespoons of extra virgin olive oil and the juice of half a lemon, and lastly add a pinch of salt: use the mixture to dress the vegetables and allow the flavours to infuse. Then add the drained rice, and slice the four Golosino Frankfurter sausages into rounds. Combine all the ingredients and add a drizzle of olive oil if needed and, enjoy!
