The Recipe:
Beat the eggs in a bowl together with a half-cup of milk and add a pinch of salt and pepper. Pour the flour into another bowl. Cut the mozzarella into thin slices and crush them a little with a fork to get rid of the excess milk. Remove the crust from the sliced bread; you can grind it in the blender to use as breadcrumbs instead of the flour, or keep for other recipes.
Lay a slice of mozzarella on a slice of bread, then lay the ham on top, ensuring that neither of the two extends beyond the edges of the bread. Seal with the other slice of bread and dip it into the beaten egg so as to coat all sides. Dip the sandwich into the flour pressing down firmly to seal the entire surface of the bread. Repeat the operation with the other 4 sandwiches.
Then pour the oil for frying in a pan and heat, then place the sandwiches in for a few minutes on each side, browning them well. Remove the sandwiches from the pan and dry them on absorbent kitchen towels. Serve hot.
