Oven-baked meatloaf. Everyone’s favourite
It is really simple to make meatloaf in the oven.

An average-sized roll or bread without its crust |

You need no special cooking skills for this recipe and it is so tasty and nutritious that you just have to rustle up a vegetable side dish – such as roast potatoes, spinach or mushrooms tossed with garlic and parsley – and you have a great Sunday lunch.
A meatloaf can be made from minced meat alone or, as in the case of our recipe, with a stuffing of provola cheese and cooked ham. Each slice of oven-cooked meatloaf will have a cheese and ham centre that is so delicious everyone will be asking for more.
The Recipe:
To make your oven-baked meatloaf, first prepare all the ingredients. Wash and chop the parsley and put the bread in water or milk to soak. Cut the provola cheese into fine slices. Now place the veal and pork meats in a bowl, mix them well using your hands, and then add the eggs, parmesan cheese, salt, pepper, nutmeg and parsley. Mix everything thoroughly and add the bread from which you have previously squeezed out the liquid, followed by the oil. Transfer the mixture to a sheet of baking paper and, with damp hands or the aid of a damp rolling pin, press it into a rectangular shape one centimetre thick.
Now cover the surface with the slices of provola cheese topped by slices of cooked ham. With the aid of the baking paper, fold over the rectangle, pressing the resulting meatloaf to make it more compact. Seal the edges and transfer the meatloaf together with the baking paper onto an oven tray. Roll the meatloaf in breadcrumbs and then dribble a little olive oil over it. Pop into the oven preheated to 200° and cook for 45 - 50 minutes.
