Pan-cooked potato cakes filled with ham and cheese

Of all the fast recipes to fall back on when time is really short, that of potato cakes with ham and cheese is well worth bearing in mind. Potato-based recipes may seem to be time-consuming but this one calls for raw grated potatoes! With potato cakes that take just 10 minutes cooking, you will be happy to offer your kids an original dish and make the family dinner even more fun. Potato cakes with ham and cheese can also provide a tasty snack to accompany an aperitif or a Sunday brunch.

The good thing about the recipe for potato cakes is that they are cooked in a pan rather than the oven! Find out how to do it. 


The Recipe:

First of all peel the potatoes and then shred them with a grater using the side with the large holes. This operation may seem rather tiresome at first but you will soon get the hang of it! Collect the grated potatoes in a bowl, then add a pinch of salt, pepper and herbs of your choice. Rosemary is excellent but you may also use thyme. Mix well to season everything and then add the flour gradually using a fine sieve. Mix well to blend the ingredients. In this phase of the work you may also use an electric beater.  

When the mixture is smooth and even, place it on the worktop and spread it out with your hands until you have a layer of roughly half a centimetre in thickness. Using a glass or a pastry cutter, cut the mixture into discs. You should be able to obtain 16 discs. On top of 8 of these, arrange the ham cut into pieces and the sliced Fontina cheese. Top them with another disc sandwich-style and shape the cakes using your hands.  

Now heat a non-stick pan containing a drizzle of oil and, using kitchen paper, distribute the oil evenly all over the pan bottom and sides. Arrange the potato cakes in the pan, cover with the lid and let them cook for 10 minutes over a gentle heat. Then flip over the cakes which should be nice and golden on one side. Before serving, check that the centre of the cake is cooked, otherwise turn it over again and continue until the cooking is complete

These cakes may be eaten hot or slightly warm accompanied with seasonal salad ingredients.
