The Recipe:
Put the water to boil, add salt and put the pasta in to cook. Meanwhile wash the lemon peel very well, then grate it to remove the rind, taking care not to get to the white part, which is bitter. In a small bowl, mix the lemon zest with butter, a pinch of salt and thyme and set aside.
In a skillet, toss the prosciutto cut into strips in a dash of oil for a couple of minutes to unleash all of its fragrance. Turn off the heat, drain the pasta and save some of the cooking water, then pour the pasta into the pan with the prosciutto and stir while adding the lemon butter. Add the cooking water tomake a creamy sauce that envelops the penne.
Bring to the table, decorating it with more lemon zest.
