Gnocchetti served with a salami meat sauce
These tiny gnocchi with a salami meat sauce make a rather special first course.

200 g Salamino Italiano alla Cacciatora P.D.O. |
350 g tomato puree |

A meat sauce or ragout need not necessarily be made from minced beef: in this ragout recipe we will find out how to make a salami meat sauce. For this purpose we shall use Salame Napoli Negroni, because of its soft consistency, which teams up perfectly with tomato puree.

The Recipe:
Gently fry the sliced onion in the oil, add the Salamino Italiano alla Cacciatora P.D.O. previously sliced or diced and let it colour well. Pour in the tomato puree with a little salt and cook for about 10-15 minutes, stirring from time to time. Cook the gnocchetti in boiling salted water and remove when still firm to the bite. Toss them in the pan with the salami ragout.
Now transfer to a large serving dish, sprinkle with grated parmigiano and mix well. Serve out generous portions with the aid of a ladle!
