4 salmon fillets |
8 slices of San Daniele D.O.P. Negroni cured ham |
2 cloves of garlic |
1 lemon |
half a glass of white wine |
fresh thyme |
extra-virgin olive oil |
salt and pepper |
A simple salmon filet becomes a special dish thanks to cured ham. The delicacy of San Daniele cured ham is particularly suited to wrapping the salmon fillets. Serve the salmon and cured ham fillets with lentils or sautéed spinach: the perfect dish for your unique romantic dinner!
The Recipe:
First carefully clean the salmon fillets, rinsing them under running water and making sure there are no bones. Then wrap each salmon fillet in two slices of cured ham. Take a baking pan that is able to contain all the fillets and grease it with a drizzle of oil.
Put the salmon fillets with ham into the ovenproof dish, spacing them slightly. Now add half a glass of white wine, the cloves of garlic that have been cleaned and cut in two, the lemon cut into wedges. Lightly season the fillets with salt but remember that they become even more savory with the cured ham. Sprinkle with a little pepper and add the sprigs of thyme.
Bake at 200° C for about half an hour: remember to baste the salmon fillets from time to time with their own cooking juice in order to keep them soft. If the cured ham already seems cooked after a short time then cover the pan with a sheet of aluminum foil: this will keep them cooking without toasting the ham too much. When the salmon is cooked you can serve it on plates or copy the idea in the image: take sheets of baking paper, put the salmon fillet in the center and close the edges with a twine.
Suggestion: But no matter how you present them you should baste the fillets with cooking juice strained after you have removed the fillets from the pan.
