100 g mozzarella fior di latte
300 g ricotta
200 g diced cooked ham
150 g frozen peas
2 leeks
1 egg
extra virgin olive oil

A pie, or a quiche if you prefer, is one of the fastest and tastiest recipes. This version with ham and peas can be enjoyed lukewarm, as an office lunch and is perfect when you organize a brunch at home. It will make you a good impression on Sunday picnics. A pie can come in a thousand variations depending on your tastes, just as you can use puff or shortcrust pastry.

The Recipe:

  • Pour a drizzle of oil in a non-stick frying pan and brown the leek sliced into rings.
  • Add the frozen peas and season with salt to bring out all their flavor.
  • Beat an egg and mix it with ricotta in a bowl, adding the diced mozzarella, diced cooked ham and the peas as soon as they have cooled down.
  • Line an ovenproof dish with a sheet of puff or shortcrust pastry and then pour in the filling, distributing it very well.
  • Cover with the other sheet of pastry, making an edge that is about one centimeter high.
  • Bake for about 35 minutes in a warm oven at 180° C.
