Remove the pizza from the oven and spread the mozzarella cut into pieces or slices along with raw mushrooms.
Put the pizza in the oven, placing it on the next to last shelf and let it cook for another 10 to 15 minutes. Check that the dough is properly cooked underneath and at the center, then remove it from the oven. Decorate with slices of coppa or pancetta and serve!
